Frosé: Semi-frozen drink made of rosé wine and strawberries

Ingredients (For 4 servings):
750 ml dry rosé wine
120 g | 1/2 cup caster sugar
250 g | 1 2/3 cups strawberries, hulled and halved
60 ml lemon juice
250 g | 1 cup crushed ice
Method:
1 Pour the rosé into a 23 cm | 9″ x 32 cm | 13″ rectangular tin. Freeze until almost solid, about 6 hours.
2 Combine the sugar with 120 ml water in a heavy-based saucepan. Bring to the boil, cooking over a moderate heat until the sugar has dissolved.
3 Remove from the heat and add most of the strawberries, reserving four halves for a garnish. Let sit for 30 minutes to infuse.
4 Strain the syrup through a fine sieve into a small bowl. Cover and chill.
5 Once the rosé is almost frozen solid, scrape into a blender and add the lemon juice, 100 ml of the strawberry syrup, and the crushed ice.
6 Blend on high until puréed. Transfer to a freezer-proof container, cover, and freeze until thickened in texture, 20-30 minutes.
7 Scrape the semi-frozen rosé into the blender and pulse again until slushy.
8 Divide between glasses and garnish with the reserved strawberry halves before serving.
